pistachio macarons

You just can't believe how expensive pistachio can be. The pistachio (nuts) although not usually cheap, but they aren't that expensive. To make pistachio ice cream, you will need pistachio paste. And the pistachio paste is priced at $85 for 1 kg and the minimum quantity is 1kg. I feel that is very expensive, well, unlike Don who lives a worry free live without the need to worry about food Antony is poor.

Somehow, Laurent and I both like pistachio ice cream, but it is virtually impossible to find pistachio ice cream in supermarket. Also, not all ice cream outlets sell pistachio flavour either. The solution? The poor man's method: Make our own. (We have an ice cream machine.)

Pistachio ice cream does taste nice, but the past few weeks have been usually cold. Laurent decided to make something else with my pistachio paste.

The moral of this blog entry: Unlike beautiful Boston and reputable Rochester with healthy and tasty food everywhere, here in Sydney, we have to make our own.

The macaroons look delicious! The $85 paste sounds extreme. However, the Lebs use pistachio nuts a lot in sweet making, and I suspect they can buy them shelled at a kilo rate much lower than your ready-made paste, and simply process them in a blender. Pray seek out a Middle Eastern food shop. One of the more expensive nuts/seeds, is the pine-nut, ideal for cooking and baking. These have an average price of $30/Kg, so I suspect the pistachios might be $40/Kg or less.
