Express and Tasty Cooking

Paris International Cooking SchoolWell, one thing I did not mention in yesterday's entry was that on Wednesday before Phantom of The Opera, I attended Laurent's cooking school's Express and Tasty Cooking Class.

The dishes are:
Chicken & Sweet Corn Soup
Pork Fillet with Peanut Sauce
Creamy Mashed Potatoes

I decided to make some modifications to the recipe. Pork Fillet with Peanut Sauce was cooked without peanut butter as I am not a fan of peanut butter. Hence, the name of the dish should be called Pork Fillet with Peanut Sauce without Peanut Butter.

There's a golden rule on mashed potatoes: do not use black pepper in mashed potatoes. Reason for that is simple black pepper look like dirt in mashed potatoes. Hence you don't get mashed potatoes with black pepper in restaurants. However, I decided to test out exact how ‘dirty’ mashed potatoes with black pepper would look like. And I got the answer: It is not that noticeable, but it does show up even with grounded black pepper.

My recommendation: when you see some black dots in mashed potatoes in restaurant, you can assume the restaurant uses good quality black pepper instead of dropping on the floor.

Seems like a pleasant enough menu. But needs a name change if you change the sauce. Pork fillet goes well with almost any flavouring because of its bland taste.
Chicken and sweet corn soup is a bit "ordinare"! I suggest Japanese wakame(seaweed)with bean curd soup.
Thin hoi sin sauce would go well with the pork fillet. The mashed potato could have some chopped flat leaf parsley mixed in.

I did change the name from Pork Fillet with Peanut Sauce to Pork Fillet with Peanut Sauce without Peanut Butter.

Peanut sauce does not only mean peanut butter.
Do you dislike peanuts altogether?

I am not allege to peanut, but peanut gives me acne. So I avoid eating it.
